
Mom’s Carrot Cake
Ingredients
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 3/4 cups sugar
- 1 cup oil, I use olive oil
- 1 cup coconut
- 4 eggs
- 2 cups grated carrots
- 8 oz crushed pineapple, drained
- 1/2 cup chopped walnuts
Directions
Sift together flour, baking powder, baking soda, salt, and cinnamon.
Add eggs, sugar, and oil. Mix well.
Stir in carrots, pineapple, and nuts.
Turn into greased pans. Bake at 350°F for 35–40 minutes.
Frosting
- 1/2 cup butter, 1 cube
- 1 8 oz package cream cheese
- 1 teaspoon vanilla
- 1+ cup confectioner’s sugar, powdered
May add decorative choice of nuts.
