Oven Sweet Potato Fries

Ingredients

  • 4 medium sweet potatoes, peeled and cut lengthwise into 8 wedges each
  • 2 tablespoons vegetable oil
  • Salt and freshly ground pepper

Directions

Preheat oven to 375°F.

Toss potato wedges with vegetable oil on a baking sheet. Lay wedges on their sides, season with salt and pepper, and roast until tender and lightly browned, about 25 minutes, turning once to make sure they brown evenly.

Serve with your favorite condiment. Ketchup or Garlic Aioli are both nice.

Garlic Aioli

Ingredients for Garlic Aioli

  • 4 medium garlic cloves
  • 3/4 teaspoon medium-grain sea salt, divided
  • 1 large pasteurized egg yolk
  • 1 cup mild, fruity extra-virgin olive oil, such as California Olive Ranch
  • 1 tablespoon water, divided

Directions

Use a mortar and pestle to grind garlic with salt. Add egg yolk, drizzle oil in, and keep grinding.

Add water when sauce is too stiff.
